Preheat oven to 190ºc, fan 170ºc, gas mark 5.
Beat the butter and sugar together until pale and fluffy. Gradually add the egg and the vanilla.
Stir in the flour, salt and bicarbonate of soda. Fold in the Jumble Bee tropical fruit, nuts, apricots and chocolate.
Using a teaspoon drop the batter onto a greased baking tray. Bake for 8-10 minutes. Remove to wire racks and let cool.
Makes around 24 biscuits.
